3 Easy Vegan Curry Recipes

It’s World Vegan Day! Award-winning author and chef Monisha Bharadwaj shares some of her favourite easy Indian recipes from her new book Indian in 7, a super easy-to-follow guide to a host of delicious dishes that can be cooked with seven ingredients or less. Here we pick three easy vegan curry recipes from the meat-free selection…

Easy Vegan Curry Recipes

Channa Masala Recipe

Serves 4

This simple recipe is one of the most popular ones at my cooking classes. You can make the curry sauce in bulk and freeze some, so that the next time it will take less than 10 minutes to make this curry. If you cook rice on the side and chop up some crunchy salad, a hearty meal can be on the table within 20 minutes. You can use other canned beans here – try butter beans or red kidney beans. The curry sauce can also be cooked with firm vegetables, such as potatoes, cauliflower or broccoli – these will go into the pan first, then the ground spices along with a splash of water, and lastly, the curry sauce can be poured on top and cooked until the vegetables are tender. The blended sauce has a creamy consistency without the need to add any cream.

Ingredients

  • 2 onions, sliced
  • 1 tablespoon tomato purée
  • 1 teaspoon ground turmeric
  • 1 teaspoon medium chilli powder
  • 1 teaspoon ground coriander
  • 400g can chickpeas, drained and rinsed
  • 2 tablespoons chopped fresh coriander leaves, to garnish

Method

  1. Heat 1½ tablespoons of sunflower oil in a heavy-based saucepan and fry the onions over a high heat for 4–5 minutes until they start to turn golden brown. Reduce the heat to medium and cook for a further 7–8 minutes until they are soft.
  2. Add 1 tablespoon of ginger-garlic paste (page 26) and cook for a few seconds, then add the tomato purée and fry for a minute, or until well blended.
  3. Remove from the heat, carefully transfer the mixture to a blender, add enough cold water to just cover the mixture, then blend until smooth. Set aside.
  4. Heat 1½ tablespoons of sunflower oil in the same pan and add the ground spices. Fry over a high heat for a few seconds until they change colour, then add 3–4 tablespoons of cold water and continue to cook until the water has evaporated. Add the chickpeas and mix well, then cook over a high heat for 3–4 minutes until the chickpeas have heated through.
  5. Stir in the sauce from the blender and season with salt. Rinse out the blender with 2–3 tablespoons of cold water and add this to the pan. Bring to the boil, then reduce the heat, cover and simmer for 5–6 minutes until the curry is heated through. Serve hot, garnished with the coriander with plain boiled rice or rotis.

Onion Bhajia Recipe

Serves 4

These moreish fritters are commonly called ‘bhaji’ outside of India, but in their native country a bhaji is a stir-fry of vegetables and not a fritter at all. Some Western chefs add egg to the batter – this is not necessary as the gram flour itself is sticky enough to be a binding agent. These gluten-free fritters are made from a particular variety of pulse called Bengal gram (see page 24). Gram flour becomes crisp when fried and is therefore used in many Indian snacks including Bombay mix. Ajowan or ajowan seeds – also called carom seeds – are added to fritters, such as bhajia and pakoras, as such dishes, along with gram flour, can be heavy to digest, and ajowan seeds are known to be a digestive.

Ingredients

  • ½ teaspoon medium chilli powder
  • ½ teaspoon ground turmeric
  • Pinch of ajowan seeds or cumin seeds
  • 5 tablespoons gram flour
  • 2 onions, sliced

Method

  1. Combine the chilli powder, turmeric, ajowan or cumin seeds and gram flour in a mixing bowl. Pour in a little cold water at a time and mix to make a thick, custard-like batter. Season with salt, bearing in mind that you will need a little more than you think, as it will be seasoning the onions that go into the batter as well.
  2. Heat enough sunflower oil (about 1 cm deep) in a large, deep frying pan over a high heat until hot.
  3. Fold the sliced onions, in batches, into the batter, evenly coating them with the batter. If you put all the onions into the batter at once, the salt in the batter will draw out the juice from the onions and make the batter loose. The batter should just coat the sliced onions.
  4. Test the temperature of the oil by carefully dipping a slice of raw onion into it. The onion should immediately sizzle if the oil is hot enough.

Bhoplya Chiamti – Pumpkin in Creamy Coconut Vegan Curry

Serves 4

I love pumpkin and almost always cook it with the skin on. This adds a bit more texture to the dish and the skin softens enough upon cooking to chew easily. It also holds the shape of the pumpkin pieces and stops them from disintegrating. If the pumpkin is very fleshy, you’ll have some pieces with no skin and they’ll just collapse a bit more than the others. I’ve used passata in this recipe, which gives a smooth sauce when combined with the coconut milk. You can use roasted cashew nuts for this recipe, or even add sunflower or pumpkin seeds instead, if you like.

Ingredients

  • 2 fresh green chillies, finely chopped (seeds and all)
  • 10 fresh or 15 dried curry leaves, chopped or crumbled
  • 1 teaspoon ground turmeric
  • 200ml passata (sieved tomatoes)
  • 400g deseeded pumpkin, chopped into small cubes with the skin left on
  • 400ml can coconut milk
  • 15 unsalted cashew nuts

Method

  1. Heat 2 tablespoons of sunflower oil in a saucepan. Stir in 2 teaspoons of ginger garlic paste and the chillies and cook over a high heat for a couple of minutes.
  2. Add the curry leaves and cook for a further minute, then add the turmeric and cook for a few seconds.
  3. Add the passata and cook for 3–4 minutes until everything is well blended.
  4. Tip in the pumpkin, season with salt and then pour in 150ml boiling water. Bring to the boil, then reduce the heat, cover and cook for 7–8 minutes until the pumpkin is nearly tender, adding a few tablespoons of cold water if the pan starts to dry out.
  5. Pour in the coconut milk, then stir in the cashews. Cook over a medium heat until the curry comes to the boil. Serve hot with plain boiled rice or poppadoms.

Step inside stunning renovated Victorian house – with secret den hidden behind a door in the bookcase!

Although originally intended to be an investment property, as they had a baby on the way, these homeowners decided to turn this London house into a family home for themselves instead.

The first time renovators have blended their styles to sympathetically extend and decorate their Victorian house. ‘We’ve ended up with a home that blends our tastes perfectly. Mixing traditional elements with a more laid-back, modern feel’ says the homeowner.

‘We applied for planning permission to extend the ground and first floors’ explains the owner. ’As well as to convert the loft and basement to make the property work for us.’ In August 2018, the year-long build began.

Renovated Victorian house

‘This is a great entertaining space, as you can prep food while everyone has nibbles at the island, then move to the table. The long skylight is an amazing feature. At night the spotlights look like stars.’

Commenting on the renovation the homeowners say, ‘Inevitably, there were many challenges. There were issues with a shared drain when digging out the basement, the kitchen floor had to be reinforced for the Aga, a skylight was put in the wrong place and there were several leaks.’ Going on to point out, ‘But the builders were amazing, coming back to deal with any snags.’

Kitchen-diner

The couple have combined old and new with a vintage dining table and a modern green velvet sofa. ‘Having a sofa in here is great as guests can sit and chat while we’re cooking.’

The wide opening to the kitchen-diner gives views from the front to the back of the house.

Interior designer Caitlin Miller transformed the main living spaces, bedroom suite and shower room. And collaborated on the kitchen design with Eclectic Interiors.

‘She blended the best of our ideas to create a cohesive feel’ explains the owner. ‘It was a stressful year tackling such a big renovation, especially with a baby, but using an interior designer made the process much easier and now I can’t wait to add the finishing touches.’

Hallway

‘I love steel doors, so they were the natural choice for the new, bigger opening here. They also bring more light into the middle part of the house’ explains the owner.

Secret door in the bookcase

The bookcase pivots to reveal a hidden doorway leading down to the basement den.

‘Now we have a utility, which is great for cleaning bottles and storing baby items. It’s in the basement, which is accessed via a secret door in the living area bookcase. The space also includes a den, kitchenette and bedroom with en suite. It’s like a separate flat and could have multiple uses in the future’ says the homeowner.

‘By extending at the side, we’ve created a luxurious main suite, as well as two guest bedrooms and a bathroom on the top floor.’

Den living room

A sectional sofa seats 10 for movie nights and is teamed with a large bespoke ottoman. ‘It’s so light down here due to the high ceilings and wide light well,’ explains the homeowner. A super-sized rug extends beyond the furniture for a luxe look.

‘The basement is soundproofed so it’s great for watching sports or having people over’.

Bedroom

‘The bedroom design was all about creating a relaxing, zen-like space with vintage and antique touches. I particularly love the pleated lampshades and picked a pale yellow to add some warmth against the blue.’

Bedroom shoe storage

‘You need to give lots of thought to future-proofing your design. Caitlin taught me to really consider the function of every room and how each space might evolve
to suit every stage of our lives’ says the owner. This space dedicated to shoes won’t date, that’s for sure.

Shower room

bathroom with gold taps and fittings

As the couple already have a bath in their main bathroom, they chose a large walk-in double rain shower for this space. ‘I love the warm tones of bronze and gold,’ says the owner.

The Link Up: The Stain/Odor Spray Emily Swears By Since Getting The Pups, Ryann’s Foldable Exercise Bike, and Two Kitchen Reveals You MUST See

Hope everyone had a VERY happy and safe Halloween yesterday! Can you believe it’s NOVEMBER? You guys 2020 is almost OVER. We for one are utterly stunned. With all that being said, we’re not gonna take up too much of your precious time in this intro, so let’s get right to the meat. Here’s your weekly link up:

This week’s house tour was brought to us by deVOL kitchens and boy is it mmm-mmm good. This Swedish hideaway cottage belongs to Laura and Nora of Our Food Stories who also did the styling AND photography (what talent!!) It’s quickly become an Instagram favorite –– understandably so –– and is now one of our favorites too. The kitchen is located in the center of a light and airy Scandinavian home and it’s SO inviting and warm in the best way. Also, in case you’re curious, this is The Haberdasher’s Kitchen by deVOL… check out more photos here 🙂

From Emily: Having puppies is SO awesome but it can be harsh on the house and my furniture at the same time. This spray changed our dog parent lives and it saves my house from puppy accidents that (of course) happen.

Also From Emily: Here’s another huge congratulations to my friend Amber Lewis (@amberinteriors) who works her ass off and creates such beautiful work and inspiration…check out her home reveal that came out on AD this week and if you haven’t already, you can buy her new book here.

From Mallory: Yes I’m still wearing workout clothes most of the day just like I was in the beginning of quarantine, but I have a problem. My workout shoes are COMPLETELY disgusting because to be honest, I’ve had them since high school (woah). I’ve never splurged on workout shoes before, but I think these shoes would be a great investment & I’m HIGHLY considering getting them. I love that they’re slip on, they look so chic and they’re super lightweight. I was worried about them being white but when I went to the store (safely and with a mask) to check them out the girl told me she spilled red wine on hers but got the stain out because they’re machine washable. I just convinced myself to buy them. Sold.

From Jess: Guess who just revealed their kitchen??? If you guess Carmeon Hamilton you guessed right. She calls it a refresh but rest assured the transformation has the impact of a reno. You might recognize the backsplash tile from this bathroom. Can you take a wild guess why a Henderson and a Hamilton would both choose such an exquisite tile? 😉

From Malcolm: I’m pretty picky about my personal art collection, so it’s saying A LOT that I’ve had a few prints from Ashleigh Corrin consistently in my collection for years now! She’s an amazing illustrator and friend that I’ve known for a very long time, and her socially conscious, positive, and inclusive artwork would be appropriate for any art-lover.

From Caitlin: From Caitlin: Last week we got on our 9:30 AM Monday Zoom and the literal first words out of my mouth – before like, “hello” or “good morning” – were “OH MY GOSH JESS, YOU LOOK SO BEAUTIFUL!!!” Y’all her skin looked LUMINOUS and it was because she was wearing this glow screen. I should have known that it was good (I’m pretty sure it’s already been endorsed here by Em, Sara, AND Bowser, all of whom really know skincare) but WOW if y’all are looking for something to spice up your video chats and stop your coworkers in their tracks, this stuff DOES THE TRICK.

Also From Caitlin: WAIT while I have this microphone: is anyone else watching The Bachelorette??? Maybe it’s the quarantine and general lack of new programming but I am REALLY INVESTED in this season. Can we talk about last week’s episode in the comments?? My take: I wish Clare didn’t fall so fast because I woulda loved a whole season of her shutting down foolishness and sending people home quickly and mercilessly…but now I wanna clock her for wasting everyone’s time. VERY excited for next week’s twist and am deeply in love with Bennett which was a REAL big unexpected plot twist for me. (Also PS. I’m obsessed with the 2 Black Girls 1 Rose podcast which is laugh-out-loud hilarious. Are there any other good Bachelor recap podcasts that can compete?)

From Ryann: For the past couple of weeks I have obsessing about buying myself an exercise bike. I don’t need or want anything fancy, but since I’ve been working from home I’ve noticed I have been moving my body far less. I think a folding exercise bike like this one would be a good investment because I could do 10-15 min workouts throughout the day as needed to ease anxiety or just help get the juices flowing. It is pretty affordable but as someone who has never owned one before, I am nervous it’ll end up collecting dust after a few months. Does anyone have any experience with foldable exercise bikes and if so, do you still use it or was it just a phase??

Have a great rest of your Sunday and see you all tomorrow. xx

10 Steps To a Blissful Bedtime

Looking for ways to relax to the max? Now we’re all staying at home more and the clocks have changed, here are ten ways to cheer yourself up on these dark days for the ultimate blissful bedtime.

10 Ways To Relax Before Bedtime

1. Open the front door, go straight to the basin and wash your hands

Wild Sage + Co handmakes Frankincense and Orange soap that smells as fresh as squeezing the citrus fruit into your hand and lavender and geranium soap redolent of crushing newly-picked buds between your fingers, and chokka with natural (moisturising) glycerine. It’s a family business (two women and a baby) run from a cottage by the River Wye. Cottage industry, indeed. They make their cold-processed soaps using homemade recipes into which they sprinkle everything from rose to lemongrass that they’ve grown in their garden. All their ingredients are natural, and their simple glass and aluminium packaging biodegradable and recyclable. You’ll be smitten. Soap, £4.20 for 100g, wild-sage.co.uk

2. Then pop your daily immune support

If you’re after immune support and mood enhancers, you’ll have made a dash (or an online one) for John Bell & Croyden – everyone’s favourite pharmacy, and by appointment to Her Majesty. (Is that where we purchase our Royal Jelly, M’aam?) Vitamins, minerals, multi supplements, you’ll find them all there. Plus spirulina (its Vitamin B12 contributes to the reduction of tiredness and fatigue), chlorella (think leafy green veg in a pill), probiotics, prebiotics. And particularly helpful for these taxing times are their Bach Rescue Pastilles, flower essence ‘sweeties’. They really do take the edge of things.

3. Order a takeaway from Benares and while you’re waiting, light a candle

It’s scientifically acknowledged that a state of stress increases our reliance on our senses, and the sense of smell is a prime mover in lowering anxiety levels. So inhale (meditatively) the oodles of essential oils of lavender, geranium and patchouli in Slojo, a relaxation-boosting candle with a good fragrant throw…. then unwind and chill. It’s handmade in good old Blighty, and hand-poured into dark grey glass. Plus, you’ll get up to 50 hours of scented breathing and burning out of it. Relaxing candle, £65 for 225g, jogbliving.com

4. Put your feet up

With all the walking we’re doing nowadays, it’s time to give some well-deserved attention to your tootsies. Plump up the cushions on the sofa and slaver on (or better still get someone else to) some of Margaret Dabbs’ just-launched Pure Gold Elixir for Feet. It’s in a crested, antique gold bottle infused with colloidal gold (nanoparticles of pure 24-karat gold, known for its skin-healing properties) and botanical extracts, smells prettily of bergamot and petitgrain, and comes in the sort of custom-made gift box normally reserved for something like a bottle of vintage Krug. Better than that, this elixir really works. It is truly anti-inflammatory (diminishing redness and swelling), reduces tough, calloused skin, and is anti-ageing and powerfully restorative. Cracked skin on heels disappear in a handful (footful, maybe?) of days. Pure gold elixir, £85 for 200ml, margaretdabbs.co.uk

5. Do some sofa surfing

Hate-watching is a real thing now, so don’t be shy and binge a couple of episodes of watercooler moment TV such as Netflix’s Emily in Paris, the American comedy-drama series about Lily Collins (in the titular role) decamping to Paris for a job opportunity. I urge you not to even bother with Sofia Coppola’s On the Rocks though – it doesn’t even deserve a hate watch. For televisual excellence, tune in to Des – the three-part ITV dramatisation about Scottish serial killer, Dennis Nilsen, played mesmerisingly by David Tennant. With all those bodies being dismembered and bunged down drains, suddenly the 2020s won’t seem so bad after all. Or take your pick of what to watch, listen or read from our new culture radar.

6. Then answer the door to your Benares takeaway

They delivered thousands of meals to the NHS during lockdown. If you’re not a key worker and don’t already know Benares, a Michelin-starred Mayfair eatery with Indian-British fusion cuisine, you haven’t lived. Now they’re doing fine Indian cuisine for take away and delivery. Their lamb biryani (with rose and mint flavoured rice, plus coriander, ginger, garlic and cooked in its own steam or ‘dum’, as the Indians say) is as good as anything you’ll get in Delhi. The black dal is a must. The prawn kasundi (marinated with mustard and raw mango and grilled in a tandoor) is fit for a maharaja. Oh, and the rogan josh just perfect for a Kashmiri-style winter evening. Finish off with one of their walnut brownies. Your feast is delivered in a car in hot boxes to make sure it’s fiery as the subcontinent. And it all comes in pleasingly round, biodegradable packaging with recyclable lids.

7. Run a hot deep bath

Glug some oil into untroubled water. Almost anything from Aromatherapy Associates will do the trick when it comes to relaxation, but you should try their new Rose Bath Oil (£49 for 55ml) with its silky feel and essential oils of damask rose (uplifting and anti-depressant properties), geranium (for balance) and palmarosa (calming). In these unsettling, pessimistic times, what could be better? You’ll come up smelling of roses. For a double whammy as you lie in the bath, burn their Relax essential oil on their chic little spaceship of a ceramic diffuser dish. Called Diffuse Anxiety, it’s new for Christmas (£82).

8. Get out of the bath (slowly, you’re almost catatonic by this stage) and wave a magic wand

It may look like a deodorant stick, but this is Prismologie’s Jade and Zinc restorative balm wand. It’s quite greasy (all those tamanu, avocado, inca inchi and apple seed oils) but does that really matter when it comes with claims of regenerating and rebalancing your body and mind? If you follow the instructions, you’ll soon be dabbing it on using Neuro Linguistic Programming techniques, and anchoring good feelings. Who knows… you may even feel more balanced and grounded afterwards. Jade & Zinc meridian balm, £59 for 75ml, prismologie.com

9. Spritz your pillow

Amor Sui Sleep Mist is filled with amethyst crystals, apparently infusing the liquid with special properties. But the lavender, frankincense and vetiver essential oils alone will send you to the land of zzz before you can start say ‘counting sheep’. £10 100ml, amur-sui.co.uk

10. And so to sleep….
