As if it wasn’t Instagrammable enough already, SUSHISAMBA London Heron Tower has transformed into a magical rainforest for the festive season, featuring 500 LED lights which change colour every 30 seconds. It’s part of a collaboration with Cool Earth, a charity dedicated to helping halt rainforest deforestation in the Amazon. Alongside the twinkling installation guests can enjoy dishes from a specially created menu titled SAMBAZONIA. Worlds away from your average Christmas dinner, the feast includes crispy wagyu taquitos, shrimp tempura, black cod with sweetcorn and polenta, and a selection of sushi dishes including miso-cured tuna and soy-marinated salmon. Mexico is one of the world’s largest producers of gold, and the precious metal is woven into the country’s rich history. Chef Martha Ortiz celebrates this in her new six-course menu, Into the Gold, available at Ella Canta throughout December. The selection of artfully presented dishes includes a sea bass ceviche with kumquat, guinea fowl with white mole, and a pineapple and mango sorbet laced with gold. Swap roast turkey for Shish Tavuk: yoghurt and chilli marinated grilled turkey; alongside baked seabass, barley risotto with pulled lamb, and cheese pide with slow cooked organic egg.
